Banana Yum

Whenever I do another round of the 21 Day Fix, my husband helps me come up with “fix-approved” recipes that don’t take long to prep.  This is one of my favorite desserts, and it’s ONLY FOUR INGREDIENTS!

Ingredients:
1 small banana or 1/2 large banana (1 purple)
2 tbsp. shredded unsweetened coconut (1 orange)
1 tsp. raw honey (1 sweetener allotment)
2 tsp. natural peanut butter (2 tsp).

Directions:
1. Turn oven on HI broil.
2. Slice banana and place on plate.
3. Spoon a little bit of peanut butter onto each slice (I just use my finger haha)
4. Place coconut on an ungreased cookie sheet (the natural oils of the coconut keep it from sticking).
5. WATCH THE COCONUT UNTIL IT BROWNS.  It doesn’t take a long time and burns quickly if you step away from it too long ^_^
6. Sprinkle toasted cocout on top of banana/peanut butter slices.
7. Drizzle a tsp, of raw honey on top.

Spiced Apple/Onion Pork with Herbed Potatoes

My husband and I have been trying to come up with delicious dinner ideas from items we always have around our home.  Tonight’s concoction?  Spiced apple/onion pork with herbed potatoes!  We served it with a side of simple steamed green beans.  This recipe makes FOUR servings, so great leftovers or when you’re having guests!  Fix-approved with 1 red, 1 yellow, 1.5 green, .5 purple, and 1.5 tsp per serving (as shown).

Ingredients:
16 oz. boneless pork tenderloin
1 sweet onion (we used vidalia)
1 tart apple (we used honey crisp)
3 medium red skin potatoes
2 tbsp. EVOO
Himalayan sea salt
Pepper
Cinnamon
Side veggie of choice (we used green beans)

Pork
-Pour 1/2 tablespoon of EVOO into skillet/frying pan
-Season pork with salt/pepper
-Cook pork on each side until golden (3-4 minutes) over medium-high heat
-Once cooked, remove pork chops from the pan, and add 1/2 tablespoon of EVOO to same pan
-Add onions and apples, both thinly sliced
-Add cinnamon while cooking
-Cook until tender and caramelized
-Serve on top of pork chops!

Potatoes
-Fill medium saucepan halfway with water and bring to a boil
-Wash and cube potatoes
-Boil potatoes until tender (about 10 minutes)
-Drain potatoes and return them to the saucepan
-Add 1 tablespoon of EVOO and other seasonings you like (we used paprika, onion powder, garlic powder, Himalayan sea salt, and oregano)

Green Beans
-Steam and enjoy ^_^
