Whenever I do another round of the 21 Day Fix, my husband helps me come up with “fix-approved” recipes that don’t take long to prep. This is one of my favorite desserts, and it’s ONLY FOUR INGREDIENTS!
Ingredients:
1 small banana or 1/2 large banana (1 purple)
2 tbsp. shredded unsweetened coconut (1 orange)
1 tsp. raw honey (1 sweetener allotment)
2 tsp. natural peanut butter (2 tsp).
Directions:
1. Turn oven on HI broil.
2. Slice banana and place on plate.
3. Spoon a little bit of peanut butter onto each slice (I just use my finger haha)
4. Place coconut on an ungreased cookie sheet (the natural oils of the coconut keep it from sticking).
5. WATCH THE COCONUT UNTIL IT BROWNS. It doesn’t take a long time and burns quickly if you step away from it too long ^_^
6. Sprinkle toasted cocout on top of banana/peanut butter slices.
7. Drizzle a tsp, of raw honey on top.
BANANA…YUM 🙂
