Who said when you’re on a diet you only get to have salad?! My husband and I started the 21 Day Fix earlier this week and we’ve been experimenting a little bit with our containers. Tonight my husband tried an idea of his own, and we tried a recipe of a fellow coach. Both turned out great, and both are fix approved! The dessert was even a full serving of VEGETABLES! Shrimp “Scampi” – 6 medium shrimp sauteed in 1/2 tablespoon of Greek vinaigrette; whole wheat penne pasta coated with 1/2 teaspoon of extra virgin olive oil and salt-free seasoning; steamed broccoli and carrots. (Picture shows 1 red, 1 green, 1.5 yellow, 0.5 orange, 1/2 teaspoon)
Pumpkin “Pie” – 1 cup pure pumpkin, 1 egg (beaten), 1 teaspoon pumpkin pie spice, dash of sea salt. Mix all ingredients in a microwave-safe container and microwave for 5-6 minutes!
