With all the pumpkin recipes we’ve been making lately, we had some leftover and I REALLY wanted pancakes this morning. So I decided to modify the 2-ingredient pancake recipe and use pumpkin instead of banana! I added a little pumpkin pie spice and voila, yummy Fix-Approved pumpkin pancakes 🙂
1/4 cup pure pumpkin
2 eggs
1/8 teaspoon pumpkin pie spice
Coconut oil spray
Pure maple syrup
Sliced strawberries (or other fruit garnish)
Heat a skillet or cast-iron pan over medium heat and spray with coconut oil spray (or melt a little coconut oil on it). Whisk together pumpkin, eggs, and spice and drop around 2 tablespoons full onto pan. Cook until the edges of the pancakes start to lighten (and don’t stick to the spatula when you try to slide it under haha). Top with a tablespoon of maple syrup and your choice of fruit!
Makes about 5 medium sized pancakes!
1 Red, 1/4 Green, 1/2 Purple, Maple Syrup allotment.
